Native Americans were enjoying cranberries long before Abraham Lincoln declared Thanksgiving a national holiday. Apparently, it was introduced to settlers back in the 1600s… or so the story goes. Whether that history is accurate or not I’m not sure, but what I do know is how this little berry went from a ridged can to a beautiful dish on our holiday table.

I don’t remember anyone ever actually “making” cranberry sauce in my family. But I do remember opening the can and mixing it up, so it wasn’t just a Campbells shaped blob on a plate. IYKYK—Red. Jiggly. And if I recall I think I was the only one at the table who actually liked it.
But as I became an adult, I realized that cranberry sauce from a can was very unsophisticated. And so began a journey for the perfect homemade cranberry sauce recipe.
One year between Thanksgiving and Christmas, I tried 3 different recipes but didn’t love any of them—Well they weren’t any better than the canned stuff anyway.

Instant Pot Cranberry Sauce
The Best Instant Pot Cranberry Sauce recipe to upgrade your holiday table
Ingredients
- 2 Tablespoons Maple Syrup
- 1/4 Cup Fresh Squeezed Orange Juice
- 2 1/2 Teaspoons Orange Zest
- 12 oz Fresh or Frozen Cranberries
- 1 Cup Chopped Strawberries
- 1/2 - 1 Cup Raw Cane Sugar - Depending on your Sweet to Tart preferences (can also replace with honey or any sugar substitute to taste)
- 1 Teaspoon Vanilla
- 1 Teaspoon Cinnamon
Instructions
- Combine syrup, orange juice, zest, and 10 oz cranberries in your instant pot.
- Put lid on and set for 1 minute on Manual high-pressure setting
- Let Natural Pressure Release (NPR)
- Once pressure gauge has dropped, open lid, stir and break up cooked cranberries
- TURN ON SAUTE MODE
- Mix in remaining ingredients, including remaining 2 oz of cranberries and bring to a boil, stirring constantly so bottom doesn't burn.
- Once at a boil, unplug IP and continue to stir until sauce has cooled enough that the bottom will not burn.
- Let cool completely and serve... or put in an airtight container and refrigerate.
Notes
Sauce will thicken as it cools.
If you are using a sugars substitute, your sauce may not thicken as much as when using real sugars.
This can be made a couple days in advance and stored in the refrigerator until your holiday meal... but it will be hard not to "taste" it.... You know, just make sure it's still ok.
